Ingredients
- 150g Fusilli pasta
- 1 tbls olive oil
- skinless chicken breast
- 50g chorizo
- 1/2 red onion
- 1/2 red pepper
- clove garlic
- 8 cherry tomatoes
- 50g red pesto
- 150ml creme fraiche
- lemon juice
Method
- Cook pasta for 12 minutes (or as per pack instructions).
- Heat olive oil in a large pan.
- Dice chicken and chorizo and add to pan - fry until chicken is browned (4-5 minutes).
- Coarsely chop onion and pepper and finely chop garlic and add to pan.
- Cook until onion and pepper have softened and chicken is cooked through (5 minutes).
- Add tomatoes and cook for 3-5 minutes until they burst.
- Add pesto, creme fraiche and splash of lemon juice to chicken and warm through.
- Drain pasta and add to chicken and stir until coated.
