Roast salmon with potatoes and bacon

  1. Heat oven to 200C fan. 
  2. Boil potatoes for 10 minutes.
  3. Place salmon in the middle of a large shallow roasting dish and add potatoes around.
  4. Brush with oil, season and roast for 10 minutes.
  5. Scatter lardons over potatoes and return to oven for 10 minutes.
  6. Meanwhile, boil peas for 2 minutes.
  7. Mix peas and spring onions with potatoes and drizzle with vinegar.
  8. Sprinkle with mint to serve.
