Roast salmon with potatoes and bacon

Ingredients
- 250g baby new potato, halved
- 1 tbsp olive oil
- 75g smoked bacon lardon
- 350g lightly smoked salmon fillet
- 100g frozen pea - defrost
- 2 spring onions, sliced
- white wine vinegar (optional)
- mint, chopped
Method
- Heat oven to 200C fan.
- Boil potatoes for 10 minutes.
- Place salmon in the middle of a large shallow roasting dish and add potatoes around.
- Brush with oil, season and roast for 10 minutes.
- Scatter lardons over potatoes and return to oven for 10 minutes.
- Meanwhile, boil peas for 2 minutes.
- Mix peas and spring onions with potatoes and drizzle with vinegar.
- Sprinkle with mint to serve.
