Cod with Chorizo

Ingredients

Method

  1. Boil potatoes until tender.
  2. Heat 1 tablespoon olive oil in a large frying pan and cook onion until softened. 
  3. Add green pepper and chorizo and fry for 5 minutes, stirring occasionally. Remove from pan and set aside.
  4. Add 1 tablespoon of olive oil to the pan and fry potatoes for 10 minutes until golden and crisp, turning regularly.
  5. Meanwhile, mix remaining oil with rosemary and thyme. 
  6. Line a grill rack with foil, lay the fish skin side up and brush with half oil and herb mixture and grill for 3 minutes.
  7. Turn fish over and brush with remaining herb oil and grill for a further 3-4 minutes or until cooked.
  8. Return chorizo mixture to the pan, add the tomatoes and cook for 3-4 minutes until everything is heated through. Divide between serving plates and place fish on top.

Sauce

  1. Wipe out frying pan, add sherry and allow to bubble for 15 seconds. 
  2. Whisk in orange juice, honey and soy sauce and bubble until sauce reduces by half.
