Ingredients

Method

  1. Preheat oven to 180 fan.
  2. Place vegetables in small roasting tray. 
  3. Drizzle with half lemon juice and zest and bake for 10 minutes.
  4. Mix remaining lemon juice and zest with mustard.
  5. Place cod on top of vegetables and coat with mustard mix. 
  6. Bake for 15 minutes until cod is cooked. 
  7. Serve with baby new potatoes.
