Ingredients
- Red pepper diced 1.5cm
- Red onion sliced
- 4 cherry tomatoes (optional)
- Lemon
- Wholegrain mustard
- Skinless Cod fillets
Method
- Preheat oven to 180 fan.
- Place vegetables in small roasting tray.
- Drizzle with half lemon juice and zest and bake for 10 minutes.
- Mix remaining lemon juice and zest with mustard.
- Place cod on top of vegetables and coat with mustard mix.
- Bake for 15 minutes until cod is cooked.
- Serve with baby new potatoes.
