Ingredients
- 1 tbsp oil
- 50g diced chorizo
- 1 diced red pepper
- 400g can chopped tomatoes
- 50g pitted green olive halves (optional if smoked salmon)
- 250g skinned lightly smoked salmon fillets in chunks
- chopped parsley
Method
- Fry chorizo and pepper for 2-3 minutes in oil.
- Stir in tomatoes and olives. Add 200ml (half can) of water. Simmer for 5 minutes.
- Stir in salmon and simmer for a further 5 minutes.
- Serve with parsley.
