Ingredients
- Sausages
- 1/2 Red pepper
- 1/2 Yellow pepper
- Flesh from courgette hollowed out
- 50g grated Manchego cheese
- TOPPING
- Sweetcorn
- Butter
- 50g Breadcrumbs
- 20g grated Manchego cheese
- Chopped parsley
Method
- Fry sausage and peppers for 5 minutes
- Add courgette and Manchego and cook for further 5 minutes
- Stuff courgette shell with this mixture
- Mix topping and place on top of stuffed courgette and bake at 180 fan for 20 minutes
- Serve with chopped parsley
