Salmon Salad

Ingredients

Method

  1. If baking salmon, pre-heat oven to 180 fan and put on baking tray.
  2. Boil eggs for 10 minutes and cool in cold water, shell and crush.
  3. Meanwhile, Grill salmon for 4 minutes either side or bake for 20 minutes and set aside to cool. 
  4. Dice salad items and flake salmon.
  5. Gently toss together salmon and egg in a bowl. 
  6. Serve on lettuce.
  7. In the bowl combine pepper, cucumber, onion and a little mayonnaise. Season to taste.
  8. Pour mixture over salmon with a squeeze of lemon juice.
