Ingredients
- salmon (may be lightly smoked)
- 1 egg
- 1 red pepper, diced
- 1 cucumber, diced
- 1 small red onion, finely chopped
- mayonnaise
- lettuce
- 1/2 lemon
Method
- If baking salmon, pre-heat oven to 180 fan and put on baking tray.
- Boil eggs for 10 minutes and cool in cold water, shell and crush.
- Meanwhile, Grill salmon for 4 minutes either side or bake for 20 minutes and set aside to cool.
- Dice salad items and flake salmon.
- Gently toss together salmon and egg in a bowl.
- Serve on lettuce.
- In the bowl combine pepper, cucumber, onion and a little mayonnaise. Season to taste.
- Pour mixture over salmon with a squeeze of lemon juice.
