Chicken pasta and pesto

Ingredients
- Chicken breast
- 160g pasta
- 90g green beans
- Olive oil
- Spring onions, finely sliced
- 3 tbsp pesto
- 2 tbsp double cream
- Parmesan, grated
Method
- Poach chicken for 15-18 minutes and set aside to cool.
- Cook pasta for 6-9 minutes and add green beans and cook for further 6 minutes. Drain and reserve a little of the cooking water.
- Meanwhile, heat olive oil in a large frying pan. Add spring onions and cook for 1-2 minutes until soft.
- Shred chicken and add to pan and heat through. Stir through pesto and cream. Add pasta and beans and stir to coat, adding a little of the cooking water. Season and sprinkle with Parmesan.
