Ingredients

  • Chicken breast
  • 160g pasta
  • 90g green beans
  • Olive oil
  • Spring onions, finely sliced
  • 3 tbsp pesto
  • 2 tbsp double cream
  • Parmesan, grated


Method

  1. Poach chicken for 15-18 minutes and set aside to cool.
  2. Cook pasta for 6-9 minutes and add green beans and cook for further 6 minutes. Drain and reserve a little of the cooking water.
  3. Meanwhile, heat olive oil in a large frying pan. Add spring onions and cook for 1-2 minutes until soft.
  4. Shred chicken and add to pan and heat through. Stir through pesto and cream. Add pasta and beans and stir to coat, adding a little of the cooking water. Season and sprinkle with Parmesan.
