Haddock and Chorizo Salad

Ingredients
- Crusty white bread in 2cm cubes
 - 2 tbsp olive oil
 - 140g watercress, spinach & rocket salad
 - 175g chorizo, sliced or cubed
 - 350g smoked haddock fillet in 2½cm chunks
 - Juice 1 lemon
 - 1 tsp Dijon mustard
 
Method
- Toss bread in half olive oil.
 - Heat a large frying pan and fry bread for 5-10 minutes until crisp and golden and set aside on kitchen roll.
 - Place salad in serving bowl.
 - Wipe out frying pan and add remaining oil and chorizo and cook for 1 minute stirring occasionally.
 - Add haddock and cook for 1½-2 minutes each side.
 - Place haddock and chorizo on salad with bread cubes.
 - Return pan to heat and add lemon juice and mustard. Stir and heat through for 30 seconds and drizzle over salad.
