Ingredients
- 1½ tbsp olive oil
- Chicken breast fillet - halved horizontally
- Aubergine in 4 slices, lengthwise
- Tomato in 4 slices
- 2 slices Parma ham
- 1 tbsp Basil Pesto Sauce
- ½ tbsp white wine vinegar
- 50g wild rocket
Method
- Preheat oven to 180 Fan.
- Heat 1 tbsp oil in a frying pan and fry chicken for 4-5 minutes until browned.
- Top aubergine with tomato and chicken, season and wrap in a Parma ham.
- Bake for 15-20 minutes in greased baking tray until chicken is thoroughly cooked.
- Mix pesto sauce with oil and vinegar and toss into the rocket.
