Method

  1. Preheat oven to 180 Fan. 
  2. Heat 1 tbsp oil in a frying pan and fry chicken for 4-5 minutes until browned.
  3. Top aubergine with tomato and chicken, season and wrap in a Parma ham. 
  4. Bake for 15-20 minutes in greased baking tray until chicken is thoroughly cooked.
  5. Mix pesto sauce with oil and vinegar and toss into the rocket.
